The Best Chicken Salad Ever





I love a good sandwich. I eat sandwiches for lunch just about every day and sometimes for dinner.  A good friend of mine had me over for lunch and served this incredible chicken salad so of course I had to get the recipe.  Mixed in with the chicken is a bit of mustard, some relish, onions, and a squirt of lemon juice and of course mayo, the best part.  You could also add a chopped boiled egg, some diced celery or even some toasted almonds for crunch.

Here are the ingredients:

-One 12.5 ounce can of white meat chicken or you could use leftover chicken breast if you have it
-3-4 tablespoons of mayo, depending on how much mayo you like
-One tablespoon of relish
-One teaspoon of Dijon mustard
-Two tablespoons of chopped yellow onion
-A dash of salt and pepper
-A squirt of lemon juice

Shred the chicken in a bowl...

Then add all the other ingredients and mix well...


After everything is combined, toast a piece of bread if you want an open faced sandwich.  Any bread will work (maybe with the exception of cinnamon raisin bread, that could be weird).  Once your bread is toasted, scoop about a third of the mixture onto the bread, then layer two slices of tomato on top of the chicken mixture, then add a slice of cheese on top of the tomato.  I prefer mozzarella or Swiss but you can use any cheese you like.

Turn on your broiler and place the open faced sandwich under the broiler until the cheese has melted and everything is warmed through.  It's best to make this at room temperature that way the chicken won't take much time to warm up.  After making this sandwich, you will still have quite a bit of chicken salad left over, so if you want make another open faced sandwich, simply warm it for about ten to twelve seconds in the microwave before sticking the sandwich under the broiler.  This mixture is also yummy cold served between two slices of bread or on crackers as an appetizer.

I like to have it with fresh apples, but chips or a salad would work too.

Fancy Birdhouse


Good morning! I hope Monday is treating you well. We woke up to ice and snow, but not enough of it to keep us from going where we needed too, thankfully.  We live up on a hill in the woods and our gravel driveway is about a 1/4 mile long and goes up, up, up!  So when it snows a few inches or more, we are walking that driveway for a week or so, which isn't fun.  Especially when I have to drag a sled full of groceries up said driveway.  Not good folks, not good at all. 

While wandering through our local craft store the other day, I found this wood birdhouse and loved the shape and immediately pictured it covered in patterned paper.  I had a few sheets left from a paper pad I'd purchased awhile ago and thought the bright spring colors would be perfect to cover the house with.  So I brought it home, painted it white and covered it with the papers. I used an extra strength glue stick and so far it's worked well.  Then I embellished the house with pearls, buttons, flowers and some tiny gold leaves. I also added the words LOVE and CREATE to the side of the house, cut from the same paper pad.   The finished house is a burst of color in my craft room and I love it!

Welcome!

Hello there, welcome to my blog.  Here I will share my love of photography, baking, paper crafting, fun finds and a few family recipes that I find pretty yummy.  I also adore reading, so if I find a book I find especially hard to put down, I will share it on here.

One of my favorite things to do is to visit antique or second hand stores.  What one person considers trash, another may see as a treasure.  Last week I was roaming our local second hand store and found this adorable painted bird plate.

I immediately fell in love with the bright, fun colors and knew I had to have this for my desk in my craft room.  I picked up a mini plate holder at a dollar store and now have a cute addition to my craft room.

I hope you visit every so often to see what I've found and or created,  and I hope you leave every time with a smile on your face.
