The Best Chicken Salad Ever





I love a good sandwich. I eat sandwiches for lunch just about every day and sometimes for dinner.  A good friend of mine had me over for lunch and served this incredible chicken salad so of course I had to get the recipe.  Mixed in with the chicken is a bit of mustard, some relish, onions, and a squirt of lemon juice and of course mayo, the best part.  You could also add a chopped boiled egg, some diced celery or even some toasted almonds for crunch.

Here are the ingredients:

-One 12.5 ounce can of white meat chicken or you could use leftover chicken breast if you have it
-3-4 tablespoons of mayo, depending on how much mayo you like
-One tablespoon of relish
-One teaspoon of Dijon mustard
-Two tablespoons of chopped yellow onion
-A dash of salt and pepper
-A squirt of lemon juice

Shred the chicken in a bowl...

Then add all the other ingredients and mix well...


After everything is combined, toast a piece of bread if you want an open faced sandwich.  Any bread will work (maybe with the exception of cinnamon raisin bread, that could be weird).  Once your bread is toasted, scoop about a third of the mixture onto the bread, then layer two slices of tomato on top of the chicken mixture, then add a slice of cheese on top of the tomato.  I prefer mozzarella or Swiss but you can use any cheese you like.

Turn on your broiler and place the open faced sandwich under the broiler until the cheese has melted and everything is warmed through.  It's best to make this at room temperature that way the chicken won't take much time to warm up.  After making this sandwich, you will still have quite a bit of chicken salad left over, so if you want make another open faced sandwich, simply warm it for about ten to twelve seconds in the microwave before sticking the sandwich under the broiler.  This mixture is also yummy cold served between two slices of bread or on crackers as an appetizer.

I like to have it with fresh apples, but chips or a salad would work too.
